Ingredients:
- 4 cups chicken broth
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 cup sliced mushrooms
- 2 cups baby spinach leaves
- 1 cup shredded cooked chicken
- 2 green onions, thinly sliced
- Salt and pepper to taste
Instructions:
In a pot, bring chicken broth to a simmer over medium heat
Add minced ginger, minced garlic, soy sauce, rice vinegar, and sesame oil to the pot
Stir well
Add sliced mushrooms to the pot and simmer for 3-4 minutes until softened
Add baby spinach leaves and shredded cooked chicken to the pot
