Apple Cider Buttermilk Pancakes with Apple Caramel Syrup



These fluffy buttermilk pancakes are infused with apple cider and grated apple, then topped with a luscious homemade apple caramel syrup. Perfect for a cozy breakfast or brunch treat.

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup apple cider
  • 1 egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup grated apple
  • For Apple Caramel Syrup:
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 1/2 cup apple cider
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions:

Whisk the flour, sugar, baking powder, baking soda, and salt together in a large bowl

Put the egg, melted butter, apple cider, and vanilla extract in a different bowl

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Add the grated apple and mix it in

Put a nonstick skillet or griddle over medium-high heat and use cooking spray or butter to lightly coat it

Each pancake should have 1/4 cup of batter added to the pan

Start cooking when the top starts to bubble

Then turn it over and cook until both sides are golden brown

In a saucepan, melt the sugar over medium-low heat until it turns amber

Make sure to swirl the pan every now and then

Mix in the butter until it melts

Carefully add the heavy cream while stirring all the time

Watch out, because it might bubble up

Along with a pinch of salt, add the apple cider and mix it in

Let the syrup cook for a few minutes until it gets a little thicker

Add the warm apple caramel syrup to the pancakes while they are still hot
