Ingredients:
- 1 cup quinoa flour

- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup non-dairy milk
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup cooked quinoa
- 1/4 cup dairy-free chocolate chips
- Coconut oil for cooking
Instructions:
In a bowl, whisk together quinoa flour, cacao powder, flaxseed meal, baking powder, baking soda, and salt
Add non-dairy milk, maple syrup, and vanilla extract to the dry ingredients
Mix until well combined
Fold in cooked quinoa and dairy-free chocolate chips into the batter
Heat coconut oil in a pan over medium heat
Pour 1/4 cup of batter for each pancake onto the pan
Cook until bubbles form on the surface, then flip and cook the other side until golden brown
Repeat until all batter is used
Serve the pancakes warm with your favorite toppings
